Appetizer -- Chilly Cucumber Dip
2 cucumbers, peeled, seeded and grated
1 cup sour cream
1 cup plain yogurt
One quarter cup green onions, chopped
2 Tbsp. fresh mint chopped
1 Tbsp. fresh dill, chopped
Salt and pepper to taste
Combine all ingredients and mix well. Serve with pita bread, pita chips or bagel chips. This dip is light and flavorful and perfect for this meal. It should be easy to find some fresh cukes this time of year and this is a great way to put some to use.
The Skinny: Use low fat sour cream and yogurt. The rest of the ingredients are good as is.
