Appetizer -- Texas Caviar
2 cups fresh tomatoes, chopped
1 can black-eyed peas, drained
1 small sweet onion, chopped
1 clove garlic, minced
One half cup olive oil
One third cup red wine vinegar
One half cup fresh cilantro, chopped
Salt and pepper to taste
Combine all ingredients in a large bowl and chill for several hours before serving with tortilla chips. If you wish, you may also serve with the main course.
The Skinny: Use fat free tortilla chips.
