Main Course -- Stuffed Meat Loaf

1 and one third cups water
One third cup milk
2 Tbsp. butter
1 tsp. salt
1 and one third cups mashed potato flakes
1 egg beaten
One third cup quick-cooking oats
One half cup celery, diced
One third cup onion, diced
One half tsp. pepper
1 pound ground beef
1 cup cheddar cheese, shredded
One quarter cup ketchup

In a saucepan, combine water, milk, butter and salt and bring to a boil, then stir in mashed potato flakes and set aside. In a large bowl, combine egg, oats, celery, onion and pepper and mix, then add ground beef and mix well. Place beef mixture on a piece of wax paper and spread out to form a rectangle. Spread mashed potatoes over beef and sprinkle with cheese. Roll up and secure the seam. Place seam side up in a greased 13 x 9-inch baking dish. Bake at 350 degrees for 30 minutes, pour ketchup over the top and cook another 20 minutes or until meat is fully cooked.

The Skinny: We made this the other day and it was just great. Use your favorite egg substitute and the leanest ground beef you can find.

Lemon Green Beans

 

2 pounds green beans, washed and trimmed
1 tsp. salt
One quarter cup butter
1 Tbsp. lemon zest, grated
1 Tbsp. fresh lemon juice

Place green beans in a large saucepan and add just enough water to cover, add salt and bring to a boil. Cook for about 5 minutes and remove from pan. Melt butter in the same pan and add beans, saute for a couple of minutes, add lemon zest and lemon juice and cook for another minute. Season with salt and pepper and serve.
