Starter -- Welsh Rarebit

on

One half pound cheddar cheese (cut into small cubes)
1 Tbsp. butter
One half tsp. dry mustard
Dash or two or cayenne pepper
1 egg beaten
Salt and pepper to taste
One half cup of beer
Wheat toast

Melt cheese and butter slowly over low heat. Stir constantly until mixture is liquefied. Add dry mustard and pepper and stir. Add egg, salt and pepper and beer to cheese. Continue to stir until egg is cooked but do not let it boil. The mixture will become smooth and creamy. Spoon over sliced wheat toast.

 

The Skinny: Use low fat cheese and your favorite egg substitute.
